(adapted from the Veganomicon Banana Muffins)
Combine:
1/3 cup sugar
1 tsp vanilla
1.75 whole wheat flour
1/2 cup wheat germ
2 t cinnamon
2 t ground ginger
2 t baking powder
1/2 t baking soda
1/2 t salt
In a separate bowl, combine
1 cup soy milk
1 t vinegar
In a third bowl, combine
1/2 cup peach
1/3 cup carrots
1/3 cup canola oil
Mix wet into dry. Fold in 1/2 cup blackberries.
Bake at 350 for 20 minutes.
