Pistachio Spice Cake/ Bunny Cake

Preseason your bunny mold in a 375 degree oven for 20 minutes

In a large bowl, mix the following:
2 2/3 cup unbleached flour
2/3 cup sugar
1/2 cup finely ground pistachios
2 tsp baking powder
2 tsp baking soda
2 tsp cinnamon
2 tsp ground cardamom
1/2 tsp fine sea salt

In a second bowl, mix the follow:
1 1/3 cup soy milk
1/3 cup water
2/3 cup canola oil
1 cup pure lys syrup
2 T cider vinegar
2 t vanilla extract
1 T pistachio flavoring

Mix the wet with the dry.

Grease and flour each half the bunny. Fill each with the batter. Bake at 350 degree for 20 minutes (in a convection oven.)
