Potato Salad, Bahn-chan style
Bahn-chan style Potato Salad
Boil, microwave or roast
1 lb potatoes
Shred and reserve
1 carrot
2-3 small Jerusalem artichokes
Mash the potatoes when warm and add
1 T margarine
1/4 cup soy milk
1 T soy yoghurt
1 T mustard
1-2 T rice vinegar
Serve warm or cold
